Country Ribs For Lunch…
The other day, while watching the Housewives of Orange County, I noticed Vicki using her slow cooker to make what appeared to be country ribs. Ever since, I have wanted to have some as well.
Today, I decided to make them. I had three packages of these country ribs [however only used one]:
Used the convection oven to bake the Mac & Cheese. Great for summer cooking. Lunch today:
I put the ribs on around 9:00 am this morning and let them slow cook on high for about 2 hours before putting Honey BBQ sauce on them. I opted for Mac and cheese over potato salad because quite frankly– recently, somethings have made me feel a little ill or in some cases extremely sleepy. I trusted the ingredients for the Mac and Cheese more than the mayonnaise, etc I would have used for the potato salad.
I love foods high in potassium– so that might cause some of the sleepiness, however the items I am eating are not high in potassium– yet still causing me to be tired. I also awake feeling as if I have taken an aspirin. I always know when I take medicine. It kind of leaves me with a tin head. That’s what some of the items I have eaten lately feel like..
Why would someone want me to fall asleep? The bag? Anyway– I am careful about what I consume especially if it is a known favorite or something I have been wanting to make.
Paranoid? No– I wish. That said– lunch was great.
